However, this launch comes with an ultimatum. The new morning service is rolling out as a strict 60-day trial running through the end of the year. The restaurant is challenging locals to "save breakfast"—if the neighborhood shows up and buys it, the menu stays. If not, it disappears in 2027.
The "Use It or Lose It" Menu
Running daily from 7:00 a.m. to 11:00 a.m., the new menu is engineered for speed without sacrificing the bold flavors the taqueria is known for.
Instead of traditional bacon, egg, and cheese sandwiches, the Buena Onda morning lineup leans heavily into its Baja roots. The menu features loaded Chorizo Breakfast Tacos topped with salsa Mexicana and crema, massive California Breakfast Burritos packed with queso Oaxaca and breakfast potatoes, and hearty breakfast bowls anchored by fried eggs and black beans. To handle the morning caffeine rush, they are pouring Rival Bros drip coffee and cold brew.

Stepping Up the Morning Commute
“Breakfast should be something you look forward to, even when you only have a few minutes,” says Chef Garces. “We wanted to bring the same bold flavors and quality people expect from Buena Onda to the morning, in a way that really works for the Fairmount neighborhood.”
Located at 1901 Callowhill Street, the restaurant is perfectly positioned to catch the morning foot traffic heading toward Center City. The ball is now firmly in the neighborhood's court. If you are tired of eating the same drive-thru breakfast sandwiches every morning, you have exactly two months to prove to an Iron Chef that a better breakfast is worth keeping around.
