About Bistrot La Minette… Owner Peter Woolsey established himself as one of the city’s most capable French chefs when he debuted Bistrot La Minette in 2008. The cozy restaurant, which he owns along with his wife, Peggy Baud-Woolsey, is a family affair: Peggy’s photos adorn the walls, and tables that Woolsey built with his father from wood reclaimed during the restaurant’s construction fill the glowing dining room. The Philadelphia Inquirer’s Craig LaBan wrote that “…it is Woolsey’s authentic French menu that had me most excited,” praising the “beautifully rendered appetizers” and “numerous other highlights” on the authentic French bistro menu. Woolsey is also the owner of the knock-out riverfront restaurant La Peg at FringeArts, named “Best American Restaurant” by Philadelphia magazine in their 2016 “Best of Philly” issue. In 2019, he will partner with long-time colleagues Chef Kenneth Bush and General Manager Brad Histand to debut Gabi, an all-day French cafe located at the heart of the resurgent North Broad Street corridor.
